Et vous avez eu raison! Samedi 16 mars 2013, la famille a pris tout son sens pour Larusée! Une famille de membres… de la famille et une famille d’amis, tous réunis à l’occasion d’une mise en bouteille un peu particulière, puisqu’il s’agissait de préparer une énorme commande!

15h45, à Fenin. Tout ce petit monde arrive à l’atelier… Préparation des postes: Sam est désigné volontaire pour la mise en bouteille, Michael au bouchonnage, Marc à l’essuyage, Jean à l’étiquetage, Eric et Julia à la médaille, David à la contre-étiquette, Julie et Jean-Pierre au cirage, Vanesa au contrôle qualité, Minouche à l’empaquetage et Damien au colisage!

On enfile les gants blancs et… au travail!

18h… La moitié du chemin est parcouru. 300 bouteilles sont déjà finalisées et le travail file bon train. On s’échange les postes pour casser la routine.

20h… 33,3 cartons de 18 bouteilles trônent dans la distillerie. La plus grosse commande de Larusée – jusqu’ici! – est prête à être livrée!

You are an amateur of absinthe… but did you know the absinthe “top of the range”? Nicolas Nyfeler and his father-in-law Jean-Pierre Candaux launched into this market since 2013. They are well decided not to make as everybody in the country of the Green Fairy. They distil their Larusée in the Val de Ruz, and bet on a special packaging. Tomorrow, in the second part of this report, we shall see of what thinks of it a purist of the Val de Travers, Claude-Alain Bugnon.

The cocktail almost too easy!

Cocktail absinthe champagne larusée Place VendômeThis is certainly the simplest cocktail in the world!

Simply spray 4 or 5 pshiiits of Nuage de Larusée spray to line the walls of your champagne glass and then pour in the Brut Champagne of your choice up to 2/3 … and serve!

In this cocktail, absinthe will not denaturing the Champagne, quite the contrary. Thus, a nose of absinthe will be very present. On the palate, it will bring some very subtle notes to the Champagne.

A “wow” effect guaranteed!

André Duncan is a talented bartender. Very talented! Native of Sherbrooke, "small" Quebec city located 140 kilometers from Montreal and about fifty kilometers from the American border, André loves to participate in contests. Finalist of Made with Love, winner of the Canadian stage of Rhumbellion which opened the doors of his semi-final world to Paris, André prepares today the competition "Courvoisier Toast of Paris", competition very raised.

In one of the two cocktails he proposes, André combines Larusée Bleue with Cognac Courvoisier VS, lemon juice and Perrier.


Located at 64 Meadow Street, under the Commission des liqueurs and the La Suite restaurant, the Fabrique à boire offers an urban menu inspired by street cuisine as well as cocktails designed by André Duncan.

Coming from a family working in the food trades, it is logical that Stephan went to 15 years to learn a delicatessen caterer. During this training, he participated in the competition of the Best Apprentice of France of the Charcuterie … and wins a bronze medal! Passionate about gastronomy, he took advantage of his holidays to discover other trades: baker pastry chef, fishmonger, restaurateur, salesman in the markets … His unusual journey and his thirst for knowledge quickly brought him to responsibilities, passing from chief pork chef to chef cooked. In 2013, he specializes as a confectioner. Never doing things by halves, he tests his products in competitions and, quickly, the distinctions are at the rendez-vous! He became Best Confiturier de France in 2014 and won the supreme title of World Champion of the Jam in 2015 in Beaupuy (F).
Stéphan is a specialist in bespoke creation and works for many chefs and prestigious establishments with exclusive recipes. His creativity has no limit, he gives free rein to his imagination, bringing the greatest care to his classics (meeker raspberries, wild blueberries, rhubarb) but also to pure creations to elicit emotion (apples, Yuzu and black sesame, raspberry strawberries with Iranian black lemon and argan oil, William pears with truffles …). Stéphan Perrotte makes all his jams in small series in copper pots.

It was in the same year 2015 that the meeting between the swiss distillers and the confiturier was held at the International Gastronomy Festival of Mougins (Alpes-Maritimes). Between these craftsmen in love with flavors, the thunderbolt was immediate and the project to create jams marrying the fruit with absinthe quickly took shape.

Larusée emphasizes its distribution in France

Larusée has been operating in France since 2013, with its subsidiary Larusée EURL in Paris.

As the reputation of the brand is on an upward slope, it was decided not to operate in its own name, but to entrust distribution and brand construction in France to an independent distributor, thereby enabling Larusée to benefit from a wide and selective distribution network, as well as better logistics.

After a long process of research and selection, Larusée chose Hedon, a company based in Strasbourg, led by Cédric Kanté, who shares the same values, the same love for fine products and the same objectives of development and growth as the members of our family. Hedon is also very experienced on the new spirits, since it distributes in exclusivity the Greek brand Skinos in France.

Larusée takes off from Zürich and Geneva!

Ouch, the holidays start badly. Arrived at check-in, you realize that the bottle of Larusée that we had taken care to prepare remained on the bar! No matter! From now on, we find Larusée in the Duty-Free of Geneva and Zürich!

We are very pleased to announce that the two flagship products of our family distillery, our absinthes Larusée Bleue and Larusée Verte, are now available in Duty-Free Geneva and Zürich, in an original 100cl format, A box in the wink of the most beautiful places in Switzerland.

The airports of Geneva and Zürich see transit respectively around 16 and 28 million passengers per year. Under concession of the airports, the Swiss company Dufry now operates the duty-free shops of these two destinations. It is for absinthe in general, and for Larusée in particular, an exceptional visibility.

Un moment de Fête autour de la distillerie

Le Joli Noël de Larusée, c’est un moment dévolu aux enfants et aux parents (ou non!) des habitants de nos quatre villages: Fenin, Vilars, Saules et Engollon! Un moment où tout est offert, où les ânes sont de sortie, où on déguste de l’absinthe (pour les plus grands, évidemment!), où l’on boit le meilleur vin chaud du pays, le meilleur chocolat chaud du monde, où les bonbons et les gâteaux rivalisent d’originalité, où la soupe aux pois remplis les estomacs et où le Père Noël arrive à 19h pour une grande distribution de cadeaux!

Bref, Le Joli Noël de Larusée, dans le cadre des Fenêtres du Calendrier organisé par les Petites Mains de la Côtière, c’est le moment où ça nous fait plaisir de faire plaisir!

Le Joli Noël de Larusée!

C'est désormais une tradition, le Père Noël fait son apparition chaque année à la Grange Larusée!

Dans le cadre des Fenêtres du Calendrier organisées par l'association Les Petites Mains, où les habitants des villages de Fenin, Vilars, Saules et Engollon sont invités à décorer une fenêtre chaque jour du mois de décembre, Larusée était chargée de mettre en place le numéro 14. Et c'est pour nous l'occasion de régaler tout le monde, petits et grands!

Dans la rue des Bons-Voisins, malgré une météo… capricieuse, ce sont plus d'une centaine d'enfants et de parents qui ont pu assister à des démonstrations de jongleurs, de cracheurs de feu, se régaler de cake pops, de chocolat chaud et de vin chaud (à l'absinthe! selon l'incroyable recette de Thomas Bencze), de soupe aux pois et évidemment, pour les plus grands, déguster les produits de Larusée!

Le moment-clé, c'est incontestablement l'arrivée du Père Noël! Prévu à 19h, il est arrivé à l'heure pile, sous les acclamations des enfants qui, tous, sont repartis avec des étoiles dans les yeux et un petit cadeau dans les mains!

Un énorme merci à tous nos partenaires, au photographe Robin Nyfeler, et à tous ceux qui auront bravé la pluie et le froid pour participer à ce moment magique!

First Asian destination for Larusée: Hong Kong

Let’s seduce Asia!

A population almost identical to that of Switzerland in a territory twenty times smaller, here is the first Asian land that a bottle of absinthe Larusée will see: Hong Kong!

Literally “Perfume Port”, Hong Kong is located on the eastern shore of Pearl River, on the south coast of China, is bathed by the South China Sea and adjoins Guangdong province to the north. It is the eighth business entity and the third largest financial center in the world. With a restaurant for 600 people, Hong Kong is probably one of the largest concentrations of restaurants per capita in the world! For Larusée, the more than 170 restaurants listed in the Michelin Guide, the many bars and cosmopolitan hotels represent an exciting challenge for a launch in Asia.

To do so, we are accompanied by the excellent Damien Fleury, founder and director of The Swiss Wine Store which defends and distributes, in the world of gastronomy in Hong Kong, many high quality Swiss wines. Our distillery is particularly proud to announce that its Pastis Larusée has just won two incredible gold medals at the PALMARÈS NATIONAL DE L’AVGF (Academy of Wines and French Gastronomy), a competition approved by the French Goverement, held in the prestigious setting of the Hotel School of Paris on April 16 and at Paris International Trophy !

For Jean-Pierre Candaux and Nicolas Nyfeler, the owners of the distillery, these medals – which is more in the country of Pastis! – are a huge surprise. “We have developed our vision of Pastis by play! Maison du Whisky entrusts the creation of its Pastis to Larusée

After creating a 100% whiskey collection, La Maison du Whisky launches a range of trading around all categories of spirits dubbed 6 Carrefour de l’Odéon. On the program, a rum, a French whiskey, a gin and a Pastis imagined by Jean-Pierre Candaux especially for the range and whose recipe was embellished with a hint of absinthe.

This Pastis, little brother of the Pastis Larusée medalist at the Academy of Wines and French Gastronomy, bottled in 291 copies of 50cl, is available only from the boutique & Fine Spirits of the Carrefour de l’Odéon in Paris.

Le Pastis 6 Carrefour de l’Odéon, by LMDW

Located in the canton of Neuchâtel in Switzerland, the distillery Larusée is primarily producing absinthe. No wonder, since this legendary drink would have its origin in this same canton. In the boutique & Fine Spirits, we wanted to create a pastis which, to echo its origins, would integrate absinthe. Larusée then became the perfect interlocutor for this project. For the Swiss distillery, the production of pastis is a real watchmaking machine. Working in distillation and then maceration, it gradually integrates more than thirty herbs, natural extracts, essential oils and of course absinthe.

Matthieu Acar’s tasting note

Color: pale green.

Nose: Fresh and attractive. Anise quickly gives way to a wide range of herbs (fennel, star anise, licorice, coriander). As if to recall its origins, the pastis also reveals delicate notes of great absinthe (Artemisia Absinthium) and small absinthe (Artemisia Pontica).

Palate: Consistent with the nose, the mouth leaves however appear lemony aromas. A feeling of freshness persists and doubles as a great complexity, the aromas superimposed on each other without ever conflicting. Citrus fruits give way to sage and verbena, then green anise and licorice appear before letting absinthe and coriander come to the fore.

Final: Rich, the feeling of complexity remains. Notes herbaceous, liquorice and fennel conclude a tasting whose freshness and richness are aromatic master words.

Larusée invents the first absinthe with Edelweiss: Blanche de Léon

A creation by Larusée combines two emblems of Swiss heritage: absinthe and Edelweiss!

A new creation

Larusée offers a new absinthe recipe containing organic Edelweiss cultivated in Switzerland: Blanche de Léon! This absinthe is in the production line of Larusée, all in finesse, complexity and delicacy. The edelweiss brings an even more floral note to the original recipe as well as a certain smoothness, immediately counterbalanced by a slight spiciness. Blanche de Léon is a veritable absinthe of character.

Golden label and waxed collar, delivered in an elegant brushed aluminum case, Blanche de Léon is only produced during the cold season.

A family story

The name “Blanche de Léon” is no coincidence. It contributes a little more to the family character of the Larusée distillery. Léon Duvanel is none other than the grandfather our Master-distiller Jean-Pierre Candaux’s wife.

Originally from Val-de-Travers, with a recipe obtained from who knows where and with the knowledge to do so, Léon has always dreamed of distilling absinthe. But as his wife fiercely opposed it, he gave up on his dream … So he put away his recipe and research notebooks in an old attic trunk. Leon is no more but during his lifetime he knew how to speak to Jean-Pierre of his passion for absinthe so well that he communicated his desire to make it… Blanche de Léon is for Larusée a tribute to the one without whom nothing would have happened.

“Blanche de Léon” is only produced in limited quantities.

But what is an edelweiss?

In Switzerland, it is difficult to cross the country without seeing an edelweiss! In painting, in the name of a hotel, magazine or airline, the image of the edelweiss is omnipresent. Protected in Switzerland since 1879, it is a true national symbol!

But why use edelweiss in an absinthe? And what taste can it bring? The organic edelweiss plant, cultivated in Switzerland, brings to our absinthe “Blanche de Léon” a note of hay and chestnut. “Blanche de Léon” could be seen as a winter absinthe, with warmer notes, while Larusée Bleue would be a summer absinthe, with more refreshing notes.
